Feta Dip
- 8 oz feta cheese (use a block, not crumbles)
- ¼ cup Greek yogurt (full fat)
- 1 lemon (zested)
- 1 tablespoon lemon juice
- 2 tablespoons extra virgin olive oil
Roasted Tomatoes and Garlic
- 1 pint cherry tomatoes
- 6 cloves garlic (peeled)
- ¼ cup extra virgin olive oil
- ¼ tsp kosher salt
- 1 tablespoon fresh oregano (or herb of choice)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for roasting the tomatoes and garlic.
- Prepare Tomatoes and Garlic: Place the cherry tomatoes and peeled garlic cloves in a baking dish. Drizzle with ¼ cup of extra virgin olive oil and sprinkle with ¼ teaspoon kosher salt, ensuring everything is evenly coated.
- Roast: Bake the tomatoes and garlic in the preheated oven for 15 minutes, or until the tomatoes have burst and the garlic is soft, releasing deep flavors.
- Cool: Remove the baking dish from the oven and let the roasted tomatoes and garlic cool for about 5 minutes.
- Blend Feta Dip: In a food processor, combine the feta cheese block, ¼ cup Greek yogurt, lemon zest, 1 tablespoon lemon juice, and 2 tablespoons extra virgin olive oil. Blend until smooth, stopping to scrape down the sides with a rubber spatula as needed. Continue whipping until the mixture is very smooth and creamy.
- Assemble and Serve: Transfer the whipped feta dip to a serving bowl. Top with the roasted tomatoes and garlic, spooning some of the roasted olive oil over the top. Garnish with fresh oregano or your herb of choice. For a simpler presentation, top with extra olive oil and fresh herbs alone.
