Instructions
- Prepare Chicory Leaves: Trim the root off each head of chicory and gently pull apart the individual leaves, aiming to get about 16-20 leaves. Lay the leaves out neatly on a large serving platter to act as edible cups.
- Mix Filling: In a mixing bowl, combine the finely chopped green apple, celery, walnuts, and red grapes. Add the natural yogurt, lemon juice, and Dijon mustard, then season the mixture well with salt and pepper. Stir thoroughly to ensure the dressing coats all ingredients evenly.
- Assemble Bites: Spoon a small portion of the Waldorf salad filling into each chicory leaf towards the root end, leaving the leafy end free to serve as a handle for easy eating.

Notes
- Choose red chicory for added color contrast, but white chicory can also be used.
