  1. Prepare the Fruit: Hull and chop the summer berries, then place them in a bowl with the caster sugar and lemon juice. Stir to combine and coat the fruit evenly.
  2. Macerate the Fruit: Bring 300ml of water to a boil, pour the boiling water directly over the fruit mixture, and let it sit to macerate until cool, allowing the sugar to dissolve and the flavors to meld.
  3. Puree the Mixture: Once cooled, puree the fruit mixture in a food processor until completely smooth, then pass the puree through a sieve to remove seeds and pulp for a silky texture.
  4. Chill the Freezing Tray: Place a sided metal tray in the freezer to chill a shelf and the tray, which will help the mixture freeze evenly and quickly.
  5. Freeze and Scrape: Pour the puréed mixture into the chilled tray and cover with cling film. Freeze until frozen around the edges and slushy in the center, then use a fork to break up the ice crystals. Return the tray to the freezer.
  6. Repeat Freezing and Scraping: Every 30 minutes, use a fork to break up ice crystals to create a light, snow-like texture. Repeat this process at least three times until fully frozen and fluffy.
