Bread and Spread
- 3 slices granary bread
- 2 dessertspoons reduced-fat houmous
Salad
- 1 large handful watercress
- 1 carrot, peeled and coarsely grated
- small squeeze lemon juice
- 1 tbsp olive oil

- 2 tomatoes, thickly sliced
Instructions
- Toast the bread: Begin by toasting the three slices of granary bread until golden and crisp.
- Prepare the salad: While the bread is toasting, combine the watercress, coarsely grated carrot, a small squeeze of lemon juice, and the olive oil in a bowl. Toss gently to mix the flavors.
- Spread the houmous: In a small bowl, spread the reduced-fat houmous evenly over each slice of the toasted bread.
- Assemble the sandwich layers: Top one slice of houmous-spread toast with the watercress and carrot salad. Place a second slice of toast, houmous side down, on top of the salad.
- Add tomatoes: Layer the thickly sliced tomatoes on top of the second slice of toast.
- Finish the sandwich: Cover with the final slice of bread, houmous side down. Press the sandwich down gently, then serve as is or cut into quarters for easier eating.
Notes
- You can substitute granary bread with whole wheat or multigrain bread for a different texture.
- For extra protein, add a slice of cheese or some cooked beans if desired.
- The lemon juice helps keep the salad fresh and adds a slight tang.
