Instructions
- Sauté Onion: Heat coconut or olive oil in a saucepan over medium-high heat and sauté the diced onion until translucent, about 5-10 minutes.
- Add Spices and Jalapeños: Stir in cayenne pepper, mild chili powder, salt, distilled white vinegar, and chopped jalapeño peppers to the onion mixture.
- Prepare Cornstarch Mixture: In a separate bowl, whisk together cornstarch and water until the cornstarch is completely dissolved.
- Add Tomato Paste and Cornstarch Mixture: Pour the tomato paste and the cornstarch-water mixture into the saucepan with the onion and spices. Stir until smooth and well combined.
- Cook Chili Base: Heat the mixture until it is just about to boil, then add soy curls and the entire can of refried beans. Mix thoroughly to combine all ingredients.
- Add Vegan Cheese and Simmer: Stir in 1/2 cup of vegan cheddar cheese and reduce heat to low. Cook for 10 minutes, stirring constantly to prevent sticking.
