  • Author: Ben
  • Total Time: 23-25 minutes
  • Yield: 4 servings 1x

Description

Delicious and nutritious tuna sweet potato jackets featuring tender microwaved sweet potatoes topped with zesty tuna, fresh red onion, chili, lime juice, creamy Greek yogurt, and fragrant coriander leaves. A quick, wholesome meal perfect for a healthy lunch or dinner, with a simple veggie alternative using crumbled feta.

Ingredients

Scale

Sweet Potatoes

  • 4 small sweet potatoes (about 200g each)

Tuna Topping

  • 185g can tuna in spring water, drained
  • ½ red onion, finely sliced
  • 1 small red chilli, deseeded and chopped
  • Juice of 1 lime

Garnish

  • 6 tbsp Greek yogurt
  • Handful coriander leaves

Optional Veggie Alternative

  • Crumbled feta cheese to replace tuna

Instructions

  1. Prepare Sweet Potatoes: Scrub the sweet potatoes thoroughly and prick them all over with a fork to allow steam to escape during cooking.
  2. Cook Sweet Potatoes: Place the potatoes on a microwaveable plate and microwave on high for 18-20 minutes, or until they become tender when pierced with a fork.
  3. Split Sweet Potatoes: Remove from microwave and carefully split each sweet potato in half. Arrange them cut-side up on serving plates.
  4. Prepare Tuna Mixture: Flake the drained tuna with a fork and divide evenly over each sweet potato half.
  5. Add Vegetables and Flavor: Top the tuna with finely sliced red onion and chopped red chili, then squeeze fresh lime juice over the top to add zest.
  6. Finish and Serve: Add a generous dollop of Greek yogurt on each sweet potato half and scatter fresh coriander leaves on top for a burst of color and flavor. Serve immediately.

Notes

  • For a vegetarian option, replace the tuna with crumbled feta cheese.
  • If you prefer a spicier dish, keep some seeds in the red chili or add extra chili.
  • Make sure the sweet potatoes are cooked through before assembling for a soft texture.
  • Microwaving sweet potatoes saves time compared to baking them in the oven.
