Sweet Potatoes

Tuna Topping
- 185g can tuna in spring water, drained
- ½ red onion, finely sliced
- 1 small red chilli, deseeded and chopped
- Juice of 1 lime
Garnish
- 6 tbsp Greek yogurt
- Handful coriander leaves
Optional Veggie Alternative
- Crumbled feta cheese to replace tuna
Instructions
- Prepare Sweet Potatoes: Scrub the sweet potatoes thoroughly and prick them all over with a fork to allow steam to escape during cooking.
- Cook Sweet Potatoes: Place the potatoes on a microwaveable plate and microwave on high for 18-20 minutes, or until they become tender when pierced with a fork.
- Split Sweet Potatoes: Remove from microwave and carefully split each sweet potato in half. Arrange them cut-side up on serving plates.
- Prepare Tuna Mixture: Flake the drained tuna with a fork and divide evenly over each sweet potato half.
- Add Vegetables and Flavor: Top the tuna with finely sliced red onion and chopped red chili, then squeeze fresh lime juice over the top to add zest.
- Finish and Serve: Add a generous dollop of Greek yogurt on each sweet potato half and scatter fresh coriander leaves on top for a burst of color and flavor. Serve immediately.
