- 300g rice noodles
- 1 tsp sunflower oil
- 400g turkey breast steaks, cut into thin strips and any fat removed
- 340g green beans, trimmed and halved
- 1 red onion, sliced
- 2 garlic cloves, sliced
- juice of 1 lime, plus extra wedges for serving
- 1 tsp chilli powder
- 1 red chilli, finely chopped
- 1 tbsp fish sauce
- handful of mint, roughly chopped
- handful of coriander, roughly chopped
Instructions
- Prepare the noodles: Cook the rice noodles according to the package instructions until tender, then drain and set aside.
- Cook the turkey: Heat the sunflower oil in a non-stick pan over high heat. Add the turkey strips and fry for about 2 minutes until they start to brown and are almost cooked through.
- Add vegetables: Add the trimmed and halved green beans, sliced red onion, and sliced garlic to the pan. Continue to cook over medium-high heat for 5 minutes, stirring occasionally, until the vegetables are tender but still crisp.
- Season the stir-fry: Stir in the lime juice, chilli powder, finely chopped red chilli, and fish sauce. Cook for an additional 3 minutes to allow the flavors to meld.
- Combine noodles and herbs: Add the cooked rice noodles and roughly chopped mint and coriander to the pan. Toss everything together gently to ensure the noodles are well coated with the sauce and the herbs are evenly distributed.
- Serve: Plate the stir-fry and serve immediately with extra lime wedges on the side for added freshness and zing.
Notes
- Adjust the amount of chilli powder and fresh chilli to your preferred spice level.
- If you prefer a gluten-free version, ensure the fish sauce used is gluten-free or substitute with tamari sauce.
- The stir-fry cooks quickly, so have all ingredients prepped before starting.
- Rice noodles can stick together if overcooked or rinsed improperly; rinse under cold water after cooking to prevent clumping.
