Beef Marinade

  • 450g lean beef steak, sliced 5cm long and 5mm thick
  • 1 tbsp light soy sauce
  • 2 tsp sesame oil
  • 1 tbsp Shaoxing rice wine or dry Sherry
  • 2 tsp cornflour

Stir-fry

  • 3 tbsp groundnut oil
  • 1 red pepper, cut into chunky dice
  • 1 green pepper, cut into chunky dice
  • 3 tbsp oyster sauce
  • 2 spring onions, finely shredded (for garnish)

Instructions

  1. Prepare and Marinate Beef: Slice the lean beef against the grain into strips about 5cm long and 5mm thick. Place the slices in a bowl and add the light soy sauce, sesame oil, Shaoxing rice wine (or dry Sherry), and cornflour. Mix well to coat and let marinate for 20 minutes to develop flavor and tenderize.
  2. Cook the Beef: Heat a wok over high heat until very hot. Add the groundnut oil and when it starts to smoke slightly, add the marinated beef slices. Stir-fry for about 5 minutes until the beef is lightly browned. Remove the beef from the wok and drain in a colander set over a bowl. Discard the oil used for frying.
  3. Cook the Peppers and Combine: Wipe the wok clean and reheat on high heat. Add the diced red and green peppers and stir-fry for 3 to 4 minutes until they soften but retain some crunch. Pour in the oyster sauce and bring to a simmer, coating the peppers thoroughly.
  4. Finish and Serve: Return the drained beef to the wok and toss with the oyster sauce and peppers to combine evenly. Transfer everything to a serving platter, sprinkle the finely shredded spring onions on top, and serve immediately.
