Instructions

  1. Preheat Oven: Preheat the oven on the broiler setting to prepare for finishing the frittata.
  2. Prepare Vegetables: Chop the scallions, keeping the whites and greens separate. Roughly chop the fresh spinach, removing any tough stems. Crumble the feta cheese into small pieces.
  3. Whisk Eggs: In a medium bowl, vigorously whisk the six eggs for 3-4 minutes until well blended. Add ground black pepper and sea salt to taste, then whisk for an additional minute to combine well.
  4. Sauté Vegetables: Heat a 10-inch oven-safe frying pan over medium heat. Add butter and tilt the pan to coat the bottom evenly. Cook the spinach for 2-3 minutes until wilted, then add the scallion whites and cook another 2-3 minutes until softened.
  5. Add Egg Mixture: Pour the whisked eggs into the pan, stirring quickly to evenly distribute the spinach and scallions. Avoid stirring after this point to allow the frittata to set properly. Sprinkle crumbled feta cheese evenly over the top.
  6. Cook Edges: Cook the frittata on the stovetop until the edges appear solid and lighter in color, indicating partial cooking.
  7. Broil: Transfer the frying pan to the middle rack of the oven. Broil the frittata for about 6 minutes, watching closely to prevent burning, until the top is golden-brown and puffed up.
