Instructions
- Prepare the ingredients: Gather fresh spinach, watercress, and slice one spring onion thinly. Juice half a lemon and ensure you have cooked rice ready. Measure the vegetable stock and mixed seeds.
- Blend the soup: Place spinach, watercress, spring onion, vegetable stock, avocado, cooked rice, lemon juice, and two tablespoons of mixed seeds into a blender. Season with salt and pepper according to taste. Blend everything until completely smooth, ensuring a creamy texture.
- Heat the soup: Transfer the blended mixture into a saucepan and warm over medium heat until the soup is piping hot, stirring occasionally to prevent sticking.
