Turkey Burgers
- 500g turkey mince
- ½ red onion, grated

- handful chopped coriander
- 1 egg yolk
- salt and pepper, to taste
- 1 tbsp sunflower oil

Instructions
- Prepare the Burger Mixture: In a large bowl, combine the turkey mince, grated red onion, crushed garlic, Madras curry powder, chopped coriander, and egg yolk. Add salt and pepper according to your taste. Mix everything thoroughly using your hands until well combined.
- Shape Patties: Divide the mixture evenly and shape into 4 flat burger patties, ensuring they are compact and even in thickness for consistent cooking.
- Cook the Burgers: Heat sunflower oil in a frying pan over high heat. Once hot, cook each burger patty for about 5 minutes on each side, or until fully cooked through and golden on the outside. Ensure the internal temperature reaches at least 74°C (165°F) for safety.
- Toast the Buns: While the burgers are cooking, slice the burger buns and toast the cut sides lightly in a separate pan or under a grill until golden and crisp.
- Assemble Burgers: On the bottom halves of the toasted buns, place a generous amount of salad. Top with the cooked turkey burger patties and add a spoonful of mango chutney or lime pickle for a tangy, sweet contrast. Cover with the top buns and serve immediately.
