- 1 tbsp olive oil
- 1 small onion, finely sliced
- 1 large garlic clove, crushed
- ½ tsp turmeric
- 1 tsp ground cumin
- ½ tsp sweet smoked paprika
- 280g extra firm tofu
- 100g cherry tomatoes, halved
- ½ small bunch parsley, chopped

Instructions
- Heat oil and sauté onion: Heat 1 tablespoon of olive oil in a frying pan over medium heat. Gently fry the finely sliced onion for 8 to 10 minutes until it turns golden brown and sticky.
- Add garlic and spices: Stir in the crushed garlic clove, turmeric, ground cumin, and sweet smoked paprika. Cook the mixture for 1 minute to release the aromas of the spices.
- Mash and add tofu: Roughly mash the extra firm tofu in a bowl using a fork, ensuring some chunkiness remains. Add the mashed tofu to the pan and fry for 3 minutes to heat through and absorb the spices.
- Cook tomatoes: Increase the heat slightly, then add the halved cherry tomatoes. Cook for an additional 5 minutes or until the tomatoes begin to soften, stirring occasionally to combine flavors.
- Finish with parsley and serve: Fold the chopped parsley into the scramble for freshness. Serve the tofu scramble on its own or with toasted rye bread if you prefer.

- Use extra firm tofu for best texture in scramble.
- To keep it gluten-free, omit the rye bread or substitute with gluten-free bread.
