  • 420g unformed spiced turkey meatball mixture
  • 1 tbsp olive oil
  • Small handful of parsley, finely chopped

Instructions

  1. Preheat Oven: Heat your oven to 200°C (180°C fan)/gas mark 6 to ensure it’s ready for baking the wraps.
  2. Prepare Flatbreads: Lay out the flatbreads on a large baking tray. Sprinkle a little water on the underside of each flatbread then flip them over to the oiled side up to prevent drying during baking.
  3. Spread Meatball Mixture: Evenly divide the spiced turkey meatball mixture among the flatbreads. Spread the meat mixture out all the way to the edges to get a full coverage for the wraps.
  4. Drizzle Oil: Lightly drizzle 1 tablespoon of olive oil over the meat mixture to help keep it moist and promote browning while baking.
  5. Bake: Place the tray in the oven and bake for 10-12 minutes until the meatball mixture is cooked through and has a nice brown color.
  6. Add Parsley: Remove the wraps from oven and sprinkle the finely chopped parsley over the baked meat on each flatbread for a fresh herbal note.
  7. Roll and Slice: Carefully roll each flatbread with the meat filling inside, then cut each wrap in half to make them easier to eat.
  8. Serve with Pickled Red Cabbage: Serve the rolled turkey wraps with the 200g of pickled red cabbage on the side, which adds a tangy crunch and balances the flavors.
