  • ⅔ cup artisan bread (whole wheat boule, sourdough, focaccia, ciabatta, or baguette; ripped into small ¼” pieces)
  • Olive oil (for tossing bread, approx. 1-2 tbsp)
  • Kosher salt (to taste)

Instructions

  1. Prepare Croutons: Preheat the oven to 375ºF. Place the torn pieces of bread on a rimmed baking sheet, then toss them with olive oil and kosher salt to coat evenly. Bake for 7 minutes or until the bread pieces are crispy and golden brown. Remove from the oven and set aside until ready to serve the salad.
  2. Shave Brussels Sprouts: Using a sharp knife or mandoline, finely shave the Brussels sprouts into thin strips. Place the shaved Brussels sprouts into a large serving bowl.
  3. Toss with Dressing: Pour the homemade Caesar dressing over the shaved Brussels sprouts and toss thoroughly to ensure all sprouts are well coated with the dressing.
  4. Add Cheese: Add the shaved Parmigiano Reggiano cheese to the dressed Brussels sprouts and toss again gently to distribute the cheese evenly throughout the salad.
  5. Combine and Serve: If serving immediately, add the homemade croutons to the salad and toss one final time to mix evenly. Season with sea salt to taste if desired. Serve fresh.

  • To finely shave Brussels sprouts, trim the stem and remove any damaged outer leaves, then slice thinly from top to bottom with a sharp knife or mandoline.
