  • 2 ounces (1/4 cup) silver tequila
  • 1 tablespoon lime juice
  • 1/3 cup sparkling grapefruit seltzer or ginger beer

Glass Rim

  • 2 tablespoons sea salt
  • 1 tablespoon coarse sugar
  • 1 tablespoon vanilla extract

Instructions

  1. Make the sage ginger syrup: In a small saucepan, combine 1/2 cup water, honey (or brown sugar), sliced ginger, fresh sage leaves, and star anise. Bring the mixture to a boil over high heat. Once boiling, reduce the heat and simmer gently for 1-2 minutes. Remove from heat and allow the syrup to steep for 10 minutes to infuse the flavors. Strain and store the syrup in a glass jar in the refrigerator for up to 2 weeks.
  2. Prepare the glass rim: On a small plate, mix the sea salt and coarse sugar. Take your serving glass and dip its rim into vanilla extract to moisten it, then immediately dip it into the salt and sugar mixture to coat the rim evenly. Set aside.
  3. Assemble the cocktail: Fill the prepared glass with ice cubes. Pour in the grapefruit juice, silver tequila, and lime juice. Add 2 to 3 tablespoons of the prepared sage ginger syrup. Stir the mixture gently to combine.
  4. Add sparkling element and garnish: Top off the drink with the sparkling grapefruit seltzer or ginger beer. Garnish with fresh pomegranate arils and a sprig of fresh sage to enhance the aroma and presentation.
  5. To make a mocktail: Omit the tequila and instead add an additional 2 tablespoons of grapefruit juice along with 2 tablespoons more of sparkling grapefruit seltzer or ginger beer, then proceed with the remaining steps.
