For the Whipped Feta Dip
- 130g feta, crumbled
- 150g thick Greek-style yogurt
- ½ lemon, zested
- ¼ bunch dill
- ¼ bunch basil
- 3 tbsp extra virgin olive oil, plus extra for drizzling
For the Topping and Serving
- 1 tsp coriander seeds
- 1 tsp za’atar or chilli flakes
- 1 bunch radishes, washed and trimmed
Instructions
- Prepare the herby whipped feta: Place the crumbled feta, thick Greek-style yogurt, lemon zest, fresh dill, fresh basil, and 3 tablespoons of extra virgin olive oil into a food processor or high-speed blender. Pulse until the mixture becomes creamy and smooth. Transfer the whipped feta into a shallow serving bowl and set aside.
- Toast the coriander seeds: Heat a dry frying pan over low to medium heat. Add the coriander seeds and gently toast them for a few minutes, stirring frequently, until they release a fragrant aroma. Remove from heat.
- Assemble and serve: Sprinkle the toasted coriander seeds evenly over the whipped feta dip. Add a teaspoon of za’atar or chili flakes on top, according to your preference. Drizzle a little extra virgin olive oil over the dip. Serve immediately with fresh radishes for dipping.
