Description
A refreshing and zesty Pineapple & Ginger Punch combining tropical pineapple juice, a hint of lime, fresh mint, and gingery fizz from ginger beer, perfectly served chilled with aromatic star anise for garnish.

- 750ml pineapple juice
- 1 lime, juiced
- 750ml ginger beer
Herbs and Garnishes
- small bunch of mint, woody stalks removed
- 6–8 mint sprigs
- 6–8 whole star anise (optional)

- ice (several handfuls)
Instructions
- Blend juices and mint with ice. Pour the pineapple juice and lime juice into a blender. Add the small bunch of mint along with a couple of handfuls of ice, then blitz until the ice is crushed and the mixture is well combined.
- Prepare serving glasses. Fill tumblers or glasses with additional ice to keep the drink chilled and refreshing.
- Assemble the punch. Pour the blended pineapple, lime, and mint mixture over the ice in each glass, then top up with ginger beer to add a refreshing ginger fizz.
- Garnish and serve. Garnish each glass with a mint sprig and a piece of star anise if using, adding subtle aroma and visual appeal. Serve immediately to enjoy the fresh, vibrant flavors.
Notes
- For a stronger ginger kick, use a spicier ginger beer or add fresh grated ginger before blending.
- Star anise is optional but adds a lovely aromatic touch to the drink.
- This punch is naturally dairy-free and vegetarian.
