Smoked Salmon and Soft Cheese Filling

  • 50g light soft cheese
  • Squeeze of lemon juice
  • 1 hot-smoked salmon fillet
  • 1 heaped teaspoon capers
  • A little lemon zest

Corn, Chilli & Avocado Salsa (Tip)

  • 198g can sweetcorn, drained
  • 1 diced avocado
  • 1 small chopped red chilli
  • Juice of 1 lime
  • 1 tablespoon finely chopped red onion
  • Small handful coriander leaves
  • Seasoning, to taste

Smoky Bacon Beans (Tip)

  • 4 smoked streaky bacon rashers, diced
  • 1 onion, diced
  • 2 x 400g cans baked beans
  • 1 teaspoon brown sugar
  • 1 teaspoon mild chilli powder
  • 1 teaspoon paprika
  • Dollop of soured cream, to serve
  • Snipped chives, to garnish

Instructions

  1. Preheat the oven: Set your oven to 220°C (200°C fan) or Gas Mark 7 to prepare for baking the potatoes with high initial heat for a crisp skin.
  2. Prepare the potatoes: Rub each potato with a little oil and season with salt and pepper. Place them on a baking sheet to ensure even cooking and a crispy outer skin.
  3. Bake the potatoes at high temperature: Bake the potatoes in the oven for 25 minutes to start crisping the skin.
  4. Lower the heat and continue baking: Reduce the oven temperature to 190°C (170°C fan) or Gas Mark 5 and bake the potatoes for an additional 1 to 1 hour 15 minutes until the flesh inside is tender and the skins are crisp and golden.
  5. Optional microwave shortcut: For quicker cooking, prick the potato with a fork, wrap it in a sheet of kitchen paper, and microwave on high for 8-10 minutes until soft inside. To achieve crisp skin afterward, rub with a little oil and flash under a hot grill, turning frequently.
  6. Prepare the smoked salmon and cheese filling: In a bowl, mix 50g light soft cheese with a squeeze of lemon juice and seasoning to taste.
  7. Assemble the jacket potato: Slice a cross in the center of the baked potato and gently squeeze the base to ‘pop’ the top open. Pile the lemon-infused soft cheese into the potato cavity.
  8. Add the smoked salmon topping: Flake the hot-smoked salmon fillet on top of the cheese mixture. Sprinkle with 1 heaped teaspoon of capers and a little lemon zest to finish.
  9. Serve and enjoy: Serve immediately while warm, optionally accompanied by the suggested corn, chilli & avocado salsa or smoky bacon beans as alternative toppings.
