- Prepare the dressing: In a medium bowl, combine 2 tablespoons of extra-light mayonnaise, 1 tablespoon of reduced-sugar ketchup, half of the chopped dill, the juice squeezed from 4 lemon wedges, and a pinch of salt and pepper. Mix well until smooth to create a tangy, flavorful dressing.
- Toss the filling: Add the cooked and peeled North Atlantic prawns, diced cucumber, and halved cherry tomatoes into the bowl with the dressing. Gently toss everything together until the prawns and vegetables are evenly coated with the dressing.
- Assemble the sandwiches: Lay out two slices of wholemeal bread on separate plates. Evenly distribute the rocket leaves over the bread slices to provide a fresh, peppery base.
- Top with prawn filling: Pile the prawn, cucumber, and tomato mixture on top of the rocket-covered bread, creating an attractive open-faced sandwich.
