Instructions
- Make the marinade: In a bowl, combine 2 sprigs of fresh rosemary, 2 teaspoons granulated garlic, 1/2 teaspoon dried oregano, 3 sprigs of fresh thyme leaves, 1 1/4 teaspoons salt, granulated onion, paprika, and ground black pepper to taste. Add 1/4 cup extra-virgin olive oil and mix to form a flavorful sauce.
- Marinate the chicken: Add the 5 chicken drumsticks to the marinade and pour the juice of 2 limes over the chicken. Ensure all chicken pieces are fully coated with the sauce. Cover and marinate in the refrigerator for 20 minutes to infuse flavors.
- Prepare the potatoes: Cut the 4 potatoes into small pieces for crispiness. In a separate bowl, combine the potatoes with 1 sprig of fresh rosemary, 2 sprigs fresh thyme leaves, 2 tablespoons olive oil, salt, and ground black pepper to taste. Toss well to coat evenly.
- Arrange for roasting: Preheat your oven to 425°F (220°C). In a 9 x 19 inch roasting pan, place the marinated chicken drumsticks in the center. Scatter the seasoned potatoes around the chicken evenly.
- Roast the dish: Roast in the preheated oven for 60 to 70 minutes until the chicken is cooked through with a golden crispy skin and the potatoes are tender and crispy on the edges.
