For the Spiced Spinach Mixture

  • 2 tbsp butter
  • 2 crushed garlic cloves
  • 2 tsp garam masala
  • 2 x 80g bags washed baby spinach (160g total)

For the Cheese and Bread

  • 2 x 250g packs halloumi cheese (500g total)
  • 4 naan bread

Instructions

  1. Prepare the spiced spinach: Warm the butter in a large pan over medium heat along with the crushed garlic cloves and garam masala. Stir the mixture for about 1 minute until fragrant. Roughly chop the washed baby spinach and add it to the pan. Cook, stirring occasionally, until the spinach has completely wilted, then season with salt and pepper to taste.
  2. Grill the halloumi: Cut the halloumi cheese into cubes. Place them on a grill or under a preheated grill pan and cook until the tops are golden and slightly crispy, about 3-5 minutes per side depending on the heat.
  3. Warm the naan bread: Heat the naan breads under the grill for 1-2 minutes just to warm through and lightly toast, being careful not to burn them.
  4. Assemble the bites: Spread an even layer of the spiced spinach mixture over each warmed naan bread. Distribute the grilled halloumi cubes evenly on top of the spinach. Cut the bread into bite-sized pieces that fit the cheese and secure each piece with cocktail sticks.
  5. Serve: Serve the naan, spinach, and halloumi bites warm as a delightful appetizer or light snack.

Notes

  • You can substitute halloumi with paneer for a different texture.
  • Adjust the amount of garam masala to suit your spice preference.
  • For a vegan option, replace butter with olive oil and halloumi with firm tofu.
