For the Steak
- 2 garlic cloves, crushed
- 1 tsp ginger, grated
- 2 sirloin steaks (about 375g), trimmed of all visible fat, then cut into strips
- 1 1/2 tbsp brown miso paste
For the Salad
- 320g broccoli, stems thickly sliced, florets left whole
- 3 wholemeal noodles (132g dry weight)
- 1 1/2 tbsp brown miso paste
- 2 tbsp lemon juice
- 3 tbsp cider vinegar
- 2 tbsp ginger, finely chopped
- 1 1/2 tbsp olive oil
- 1 red onion, finely chopped
- 2 carrots (150g), cut into matchsticks
- 4 tomatoes, cut into wedges
- 1 tbsp sesame seeds
Instructions
- Prepare the Salad Vegetables and Noodles: Bring a large pan of water to a boil and simmer the broccoli for 3-4 minutes until tender but still crisp. At the same time, cook the wholemeal noodles according to the package instructions. Once cooked, drain the broccoli and noodles thoroughly and set aside to cool slightly.
- Make the Miso Dressing: In a large mixing bowl, whisk together 1 1/2 tablespoons of brown miso paste with lemon juice, cider vinegar, finely chopped ginger, and olive oil until smooth and well combined. This dressing will add vibrant flavor and a tangy kick to the salad.
- Toss the Salad: Add the cooked broccoli, drained noodles, finely chopped red onion, carrot matchsticks, tomato wedges, and sesame seeds into the bowl with the miso dressing. Toss everything gently to ensure the salad is evenly coated with the dressing and all ingredients are well mixed.
- Cook the Steak: Heat a wok or large frying pan over medium heat. Add the crushed garlic and grated ginger, stir-frying briefly until fragrant and beginning to color, about 1 minute. Add the sirloin steak strips and stir-fry for several minutes until the meat is browned and cooked to your liking.
- Finish the Steak with Miso Sauce: Pour the remaining 1 1/2 tablespoons of brown miso paste into the wok with 2 tablespoons of water to deglaze and lift the flavorful browned bits from the pan. Stir to combine and spoon this miso sauce over the cooked steak strips.
- Serve: Place half of the miso steak on top of half of the noodle salad for serving. The remaining salad and steak can be chilled for up to two days and enjoyed cold or reheated in the microwave or oven until warmed through.
