Lamb Mixture
- 400g lamb mince
- 1 garlic clove, crushed
- 1 tsp ground cumin
- 2 tsp ground coriander
- 2 handfuls mint leaves, half chopped
- 2 large tomatoes, deseeded and diced
- Salt and freshly ground black pepper, to taste
Flatbread and Topping
- 4 small khobez flatbreads or 4 soft flour tortillas
- 4 tbsp low-fat natural yogurt
- Mint leaves, remaining handful for garnish
Instructions
- Cook the lamb mince: Heat a non-stick frying pan over high heat and add the lamb mince. Cook for 5-6 minutes, stirring regularly, until it begins to brown.
- Add garlic and spices: Stir in the crushed garlic clove, ground cumin, and ground coriander. Continue cooking for 2-3 minutes until the lamb is fully browned and all liquid has evaporated.
- Combine fresh ingredients: Stir in the chopped mint leaves, diced tomatoes, and season with salt and pepper. Mix well and remove from heat.
- Prepare flatbreads for grilling: Preheat your grill to high. Arrange the flatbreads on a baking tray and spread the lamb mixture evenly over each flatbread.
- Grill the flatbreads: Place the tray under the grill and cook for 2-3 minutes until the flatbreads are warmed through and slightly charred at the edges.
- Serve: Remove from the grill, scatter the remaining whole mint leaves on top, and drizzle each flatbread with low-fat natural yogurt. Serve immediately while hot.
