Ingredients
Scale
Eggs
- 12 hard boiled eggs
Deviled Egg Filling
- ⅓ cup mayonnaise (or more to desired consistency)
- 2 tablespoons Challenge Butter (melted, salted or non-salted both work)
- 2 teaspoons yellow mustard
- 2 tablespoons sweet pickle relish (optional)
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
Toppings
- 2 tablespoons crispy crumbled bacon (or bacon bits)
- 1 tablespoon freshly chopped chives
Instructions
- Prepare the Eggs: Peel the hard boiled eggs and cut each one lengthwise in half. Arrange the egg whites on a plate or platter with the cut side facing up to create a base for the filling.
- Make the Filling: Place the yolks in a medium bowl. Add the mayonnaise, melted Challenge Butter, yellow mustard, sweet pickle relish (if using), salt, and ground pepper. Mix everything together until well combined. For an extra smooth texture, you can use a fork to mash or a hand mixer/hand blender to blend the mixture.
- Fill Egg Whites: Using a spoon or piping bag, scoop or pipe the deviled egg mixture into each egg white cavity, filling them generously for a delightful bite.
- Add Toppings: Sprinkle the tops of each filled egg with crispy crumbled bacon and freshly chopped chives to add texture and flavor.
- Serve or Chill: The deviled eggs can be served immediately or chilled in the refrigerator for up to 6 hours prior to serving to enhance flavors and ensure they are cool and refreshing.
Notes
- To achieve the smoothest filling, blend the yolk mixture thoroughly using a hand mixer or immersion blender.
- Sweet pickle relish adds a subtle sweetness but can be omitted if preferred.
- Use freshly cooked and crispy bacon for the best texture contrast.
- If you prefer a lower fat version, substitute mayonnaise with a lighter mayo or Greek yogurt, though this will alter the classic flavor slightly.
- Deviled eggs are best enjoyed within 6 hours of preparation for optimal freshness and safety.
