  • 34 pickled jalapeño slices, chopped

Instructions

  1. Prepare the Chicken: Place the chicken breast between two pieces of cling film and gently pound it with a rolling pin or a heavy pan until it is about 1cm thick. This ensures even cooking and a tender texture.
  2. Season Chicken: In a small bowl, mix the chipotle paste with half of the lime juice. Spread this mixture evenly over the flattened chicken breast to impart a smoky and citrusy flavor.
  3. Cook Chicken: Heat a griddle pan on high until very hot. Place the chicken breast onto the pan and cook for 3 minutes on one side. Flip the chicken and add the cheese slices on top for the last 2 minutes to allow them to melt while the chicken finishes cooking through. Season the chicken with salt to taste.
  4. Toast the Bun: While the chicken is cooking, place the brioche bun cut-side down on the griddle pan to toast lightly; this should take about 1-2 minutes and will add a beautiful crispness and flavor to the bun.
  5. Make Avocado Salsa: In a small bowl, mash the avocado with the remaining lime juice. Stir in the chopped cherry tomatoes, pickled jalapeños, and finely grated garlic. Season lightly with salt to balance the flavors.
  6. Assemble the Burger: Spread the avocado salsa generously over the base of the toasted bun, layer on the cooked chipotle chicken breast with melted cheese, and place the top bun over it. Serve immediately to enjoy the warm, melty, and fresh combination.
