  • ¼ cup all-purpose flour
  • 12 tablespoons olive oil

Sauce

  • 2 ½ cups chicken broth
  • ½ chicken bouillon cube or ½ teaspoon better than bouillon
  • ½ cup half and half
  • 2 teaspoons honey
  • 1 teaspoon hot sauce
  • ½ cup white wine
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 3 tablespoons butter
  • 3 tablespoons flour
  • ⅓ cup sundried tomatoes, drained and diced
  • 1 tablespoon cream cheese, at room temperature
  • ½ cup Parmesan cheese, grated
  • ¾ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon mustard powder
  • 1 pinch red pepper flakes

Instructions

  1. Prep Work: Begin by combining the chicken broth, bouillon, half and half, honey, hot sauce, and all sauce seasonings in a large measuring cup with a spout, then set aside. Measure out all other ingredients before starting the cooking process.
  2. Prepare the Chicken: Slice each chicken breast in half lengthwise to create thinner pieces. Cover with plastic wrap and pound them evenly to about ½ inch thickness using a meat mallet’s textured side. Season both sides with salt, pepper, and Italian seasoning. Sprinkle each side with flour and rub it evenly over the surface to add texture and help prevent sticking.
  3. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Place chicken pieces in the skillet in batches and cook for 4-5 minutes per side until each piece is golden brown and a crust has formed. Remove the chicken from the skillet and set aside.
  4. Deglaze with Wine: Turn off the heat briefly, then pour in the white wine. Turn heat back to medium and use a silicone spatula to scrape up and dissolve any browned bits (fond) from the skillet’s bottom and sides. Let the wine gently bubble and reduce by half, about 3 minutes.
  5. Add Garlic and Tomato Paste: Stir in the minced garlic and tomato paste, cooking for an additional minute to release their flavors.
  6. Make the Roux: Melt butter in the skillet and add the flour. Stir continuously for 2 minutes to cook off the raw flour taste and thicken the base of your sauce.
  7. Add Broth Mixture: Slowly add the prepared chicken broth mixture in small increments, stirring constantly to create a smooth and well-blended sauce.
  8. Add Sundried Tomatoes and Simmer: Stir in the diced sundried tomatoes, then bring the sauce to a boil before reducing the heat to a simmer. Let the sauce reduce and thicken for about 10 minutes, allowing the flavors to meld beautifully.
  9. Finish the Sauce: Reduce heat to low and mix in the cream cheese until fully incorporated. Gradually stir in the grated Parmesan cheese until creamy and smooth. Season with onion powder, dried oregano, dried basil, mustard powder, and a pinch of red pepper flakes.
  10. Return Chicken to Skillet: Place the seared chicken back into the sauce and spoon sauce generously over each piece. Let the chicken simmer uncovered for 5-7 minutes to heat through and allow the sauce to further thicken.
