Sweet Potato Wedges

  • 1 large sweet potato (about 190g), cut into wedges
  • 15g coconut oil
  • Salt, to season

Turkey Burgers

  • 260g turkey breast mince (under 5% fat)
  • 1 small red onion, diced
  • 1 garlic clove, grated
  • 1 large egg, beaten
  • 1 apple (about 70g), peeled and grated
  • 2 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper, to taste

Green Vegetables

  • 135g green vegetables (spinach, kale, broccoli, mangetout or green beans)

Instructions

  1. Prepare Sweet Potato Wedges: Preheat your oven to 180C/160C fan/gas 4. Microwave the cut sweet potato wedges on full power for about 6 minutes until just tender, then let them rest for 30 seconds.
  2. Make Turkey Burger Mixture: While the sweet potatoes cook in the microwave, combine the turkey mince, diced red onion, grated garlic, beaten egg, peeled and grated apple, dried oregano, paprika, salt, and pepper in a mixing bowl. Use your hands to mix everything thoroughly until well combined.
  3. Shape and Cook Burgers: Form the mixture into two patties about 3cm thick. Place them on a baking tray and bake in the preheated oven for 15 to 20 minutes until fully cooked through.
  4. Cook Sweet Potato Wedges: Heat the coconut oil in a large frying pan over high heat. Add the sweet potato wedges and shallow-fry for approximately 3 minutes on each side until golden brown and cooked through. Alternatively, you can toss the wedges in coconut oil and roast them in the oven for 15 to 20 minutes. Drain the wedges on kitchen paper and season with salt.
  5. Prepare Green Vegetables: Steam, blanch, or boil the green vegetables of your choice until tender but still vibrant in color.
  6. Serve: Plate the cooked turkey burgers alongside the crispy sweet potato wedges and a portion of green vegetables for a balanced and nutritious meal.
