Instructions
- Prepare and cook the polenta chips: Preheat the oven to 200°C (180°C fan)/Gas mark 6. Cut the ready-cooked polenta into thick chip-like pieces and rub them all over with a little olive oil. Arrange the polenta chips evenly on a baking sheet and bake in the oven for 20 minutes until they turn golden and slightly crispy.
- Prepare the chicken: Cut each chicken breast in half to create thinner portions. Lightly flatten each chicken piece using a rolling pin or a heavy can to even thickness. Rub the chicken pieces all over with olive oil to help the coating stick and to promote crispiness during cooking.
- Coat the chicken: Mix the dried breadcrumbs and grated Parmesan cheese on a plate. Dip each chicken piece into this mixture, pressing gently to ensure an even and thorough coating.
