  • 18 cardamom pods, cracked
  • 2 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • ½ tbsp ground black pepper
  • ½ nutmeg, grated
  • ¼ tsp ground cloves

  • 150g black Assam tea leaves

Instructions

  1. Toast the spices: Heat a dry frying pan over medium heat and add the cracked cardamom pods, ground ginger, ground cinnamon, ground black pepper, grated nutmeg, and ground cloves. Toast the spices for 1 minute, shaking the pan intermittently, until fragrant. Be careful not to burn them as this will affect the flavor.
  2. Mix with tea leaves: Remove the toasted spices from the pan and transfer them to a mixing bowl. Add the black Assam tea leaves to the bowl and stir well to combine all ingredients thoroughly. This ensures an even spice distribution within the tea blend.
  3. Fill teabags: Using empty teabags designed for loose leaf tea, fill each teabag evenly with the spice and tea leaf mixture. Seal the teabags securely to prevent any filling from escaping.
  4. Store and serve: Place the sealed teabags into an airtight container or jar to keep them fresh. For serving, brew one teabag in 200ml of boiling whole or coconut milk for 5 minutes to create a rich chai latte. Sweeten with honey to taste if desired. Alternatively, brew with boiling water for a classic chai tea experience.
  5. Storage tips: Store the prepared chai teabags in a sealed jar in a cool, dry place. They will remain fresh and flavorful for up to six months.
