  • 2 Little Gem lettuces, leaves separated
  • 10 Chinese pancakes (available from Waitrose, Asian supermarkets or Chinese takeaways)

Instructions

  1. Marinate Mackerel: Place the mackerel strips in a bowl and coat them evenly with 2 tablespoons of hoisin sauce. Allow to marinate while you prepare the vegetables.
  2. Prepare Vegetables: Thinly slice the spring onions and cucumber into matchsticks. Separate the Little Gem lettuce leaves and arrange them ready for serving.
  3. Cook Mackerel: Heat 1 teaspoon of vegetable oil in a large frying pan over medium heat. Add the marinated mackerel strips and fry for 3 to 4 minutes, stirring occasionally, until the fish is cooked through and the sauce becomes sticky and caramelised.
  4. Heat Pancakes: Warm the Chinese pancakes according to the package instructions, typically by steaming or microwaving.
  5. Serve: Arrange the cooked mackerel, prepared vegetables, lettuce leaves, and warmed pancakes in the center of the table. Provide extra hoisin sauce for dipping and encourage everyone to assemble their own pancakes using the ingredients provided.

Notes

  • To remove all bones, run your fingers gently along the mackerel fillets before cutting into strips.
  • If you prefer a spicier kick, add a drizzle of chili oil or sliced fresh chili to the pancake fillings.
  • For a lighter option, use lettuce leaves as wraps instead of pancakes.
