- 2 lamb leg steaks
- 1 tbsp harissa
Breads & Condiments
- 4 wholemeal flatbreads
- 4 tbsp ready-made houmous

- 2 carrots, grated
- Handful of parsley leaves, chopped
Instructions
- Prepare the Grill: Heat the grill to high to get it ready for cooking the lamb steaks.
- Season and Cook Lamb: Place the lamb on a baking tray, rub all over with the harissa paste, season with salt and pepper to taste. Grill the lamb for 6-8 minutes, turning halfway through to cook evenly.
- Rest the Lamb: Once cooked to your liking, remove the lamb from the grill, transfer to a plate, and allow to rest for a couple of minutes to redistribute the juices.
- Warm the Flatbreads: While the lamb rests, warm the wholemeal flatbreads briefly under the grill or in the oven until soft and pliable.
- Assemble the Flatbreads: Spread 1 tablespoon of ready-made hummus on each flatbread evenly.
- Add Lamb and Veggies: Slice the rested lamb thinly and place down the center of each flatbread. Top with the grated carrot and chopped parsley mixture.
- Finish and Serve: Drizzle any resting juices from the lamb over the fillings, then roll up the flatbreads tightly and serve immediately for the best flavor and texture.
