Turkey Mixture

  • 1 Tbsp. cooking oil
  • 1 lb. ground turkey
  • 1 tsp. poultry seasoning (store-bought or homemade)
  • 1 tsp. salt (divided: 1/2 tsp. with potatoes, 1/2 tsp. here)
  • 1/2 tsp. garlic powder (divided: 1/4 tsp. with potatoes, 1/4 tsp. here)
  • 1 small onion, chopped
  • 2 cups frozen mixed veggies, thawed
  • 2 Tbsp. all-purpose flour
  • 1 1/2 cups low-sodium chicken broth
  • 1/2 cup heavy cream or half and half
  • Fresh parsley or thyme, optional

Instructions

  1. Cook Potatoes: Heat a skillet and cook the shredded hash browns according to package directions. Season the potatoes with 1/2 teaspoon salt, 1/4 teaspoon garlic powder, and 1/4 teaspoon black pepper if they are unseasoned. Stir well, then transfer to a plate and cover with foil to keep warm.
  2. Brown Turkey: Wipe out the skillet and return to medium-high heat. Add 1 tablespoon cooking oil. Once hot, add the ground turkey, spreading it evenly in the skillet. Season with the remaining 1/2 teaspoon salt, 1/4 teaspoon garlic powder, and 1 teaspoon poultry seasoning. Allow the turkey to cook undisturbed for 3-4 minutes until browned on the bottom.
  3. Sauté Onion and Veggies: Add the chopped onion to the turkey and stir to combine. Cook for 2-3 minutes until the onion begins to soften. Stir in the thawed mixed vegetables and combine thoroughly.
  4. Make Sauce: Sprinkle 2 tablespoons flour over the turkey and vegetable mixture, stirring to coat. Slowly drizzle in 1 1/2 cups low-sodium chicken broth while stirring continuously. Cook for 2-3 minutes until the sauce thickens and begins to simmer. Add 1/2 cup heavy cream or half and half and stir for an additional 30 seconds to combine and heat through.
  5. Combine and Serve: Remove the skillet from heat and carefully top the turkey mixture with the cooked shredded potatoes. Allow the steam from underneath to warm the potatoes. Garnish with fresh parsley or thyme if desired before serving.

  • If using pre-seasoned hash browns, adjust salt and spices accordingly.
