- 3 slices wholegrain or rye toast
- 3 tbsp ready-made houmous
- 1 small avocado (100g), stoned and sliced
- 1 handful rocket leaves
- 8–12 cherry tomatoes, sliced
Instructions
- Toast the bread: Toast the 3 slices of wholegrain or rye bread until golden and crisp to provide a sturdy base for the sandwich.
- Spread houmous: Evenly spread 1 tablespoon of ready-made houmous over one side of each toasted bread slice to add flavor and moisture.
- Build first layer: On one slice of the houmous-coated bread, arrange half of the sliced avocado, rocket leaves, and cherry tomatoes evenly. Season lightly with freshly ground black pepper to taste.
- Add second slice: Place another slice of houmous-spread bread on top of the first layer, then pile on the remaining avocado slices, rocket leaves, and cherry tomatoes. Season again with a little pepper.
- Finish sandwich: Top the ingredients with the final slice of bread, houmous side down, to complete the sandwich layers.
Notes
