Instructions

  1. Prepare the cucumber slices: Chop off the ends of the cucumber and use a mandolin or a vegetable peeler to create thin, lengthwise slices. Lay the slices on several layers of paper towels, cover with additional paper towels, and gently pat dry. Let them sit to remove excess moisture while preparing the sauce.
  2. Make the tzatziki sauce: In a bowl, combine the plain Greek yogurt, fresh lemon juice, minced garlic, chopped fresh dill, salt, and ground black pepper. Mix well until all ingredients are fully incorporated.
  3. Assemble the sushi rolls: Spread a thin layer of the tzatziki sauce onto each cucumber slice. Top with a few slices of bell pepper, red onion, and a sprinkle of crumbled feta cheese. Carefully roll up the cucumber slice around the fillings and secure it with a toothpick. Repeat with remaining slices and fillings until all are used.
