Instructions
- Prepare Hard-Boiled Eggs: Place eggs in a pot and cover with cold water. Bring to a boil over medium-high heat, then cover and remove from heat. Let sit for 8 to 10 minutes. Alternatively, place eggs in an Instant Pot steamer basket with 1 cup water and cook on high pressure for 5 minutes, then quick release pressure.
- Cool and Peel Eggs: Transfer eggs immediately to an ice bath to cool completely, about 1-2 minutes. Crack the wider end under cold running water and peel shells carefully.
- Make the Filling: Grate the egg yolks into a mixing bowl to ensure a fluffy texture. Add mayonnaise, Dijon mustard, kosher salt, smoked paprika, and finely chopped pickled onions. Stir until well combined.
- Fill Egg Whites: Using a piping bag or a Ziploc bag with a corner cut off, pipe the yolk mixture evenly into the halved egg whites.
- Prepare Toppings: Slice the smoked sausage into 12 thin slices, then cut those slices in half. Pan-fry the sausage halves until slightly crispy on both sides; set aside to cool.
- Garnish Deviled Eggs: Arrange one slice of sausage on each filled egg half. Add thin slices of radishes, cherry tomatoes, 1 caper, and a piece of pickled onion on each egg. Top with small dill pieces.
- Season and Serve: Sprinkle the filled and topped eggs generously with everything but the bagel seasoning. Serve immediately and enjoy!
