Instructions
- Preheat the oven: Set your oven to 400 degrees F (205 degrees C) to prepare for baking the cinnamon rolls.
- Melt the cheeses: In a microwave-safe bowl, combine 3/4 cup shredded mozzarella cheese and 2 tablespoons cream cheese. Microwave for 1 minute, stir, then microwave again for 30 seconds until melted and well combined.
- Make the dough: Add 1 egg and 3/4 cup almond flour to the melted cheese mixture. Gently mix together until a dough forms. If sticky, sprinkle a bit more almond flour.
- Roll out the dough: Spray two large pieces of parchment paper with nonstick cooking spray. Place the dough ball between the papers and roll it out into a rectangle about 1/2 to 3/4-inch thick.
- Transfer dough to baking sheet: Remove the top piece of parchment paper and transfer the dough on the remaining piece directly onto a baking sheet.
- Prepare the filling: Melt 3 tablespoons butter in a saucepan over low heat. In a small bowl, mix 3 tablespoons granulated erythritol with 2 tablespoons ground cinnamon.
