Ingredients
Scale
Egg Mixture
- 4 Eggs
- 1/4 cup Milk
- 1/2 teaspoon Kosher Salt
Vegetables
- 1 cup Broccoli Florets
- 1/2 Onion
- 1/2 Red Bell Pepper
- 2 cloves Garlic
- 1/2 teaspoon Crushed Red Pepper Flakes
Other
- 1 tablespoon Extra-Virgin Olive Oil
- Nonstick Cooking Spray (as needed)
- 3/4 cup Pepper Jack Cheese (shredded)
Instructions
- Preheat Oven: Set the oven rack on the top shelf and preheat the broiler to 500 degrees F (260 degrees C).
- Prepare Skillet: Spray a 10 to 12-inch cast iron or heavy skillet with nonstick cooking spray, then add 1 tablespoon of extra-virgin olive oil and swirl to coat the pan evenly.
- Steam Broccoli: Chop the broccoli florets and place them in a glass measuring cup filled with enough water to cover. Microwave on high for 3 minutes until tender.
- Chop Veggies: Coarsely chop the onion, finely chop the red bell pepper, and mince the garlic cloves.
- Sauté Vegetables: Heat the skillet over medium-high heat. Add the onions, red bell pepper, and crushed red pepper flakes. Stir frequently, cooking until peppers and onions are mostly softened, about 3-5 minutes. Reduce heat to medium and add minced garlic, cooking for an additional 1 minute until fragrant.
- Beat Eggs and Milk: In a medium bowl, beat together the eggs and milk until the mixture is fluffy.
- Combine Ingredients in Skillet: Pour the beaten egg mixture into the hot skillet with the sautéed vegetables. Add the steamed broccoli evenly on top, then sprinkle shredded Pepper Jack cheese over the mixture. Season with kosher salt.
- Broil the Frittata: Place the skillet on the top oven rack under the broiler with the oven door slightly ajar. Broil for 3 to 5 minutes, checking every minute and rotating the pan to ensure even browning. Remove when the eggs are puffed and golden brown on top.
- Cool and Serve: Take the skillet out of the oven and cool on the stove top for 3 to 5 minutes. Cut into wedges with a pie cutter and serve warm.
Notes
- Using a cast iron skillet helps achieve even cooking and browning under the broiler.
- Watch the frittata carefully during broiling to avoid burning since oven heat is intense at 500°F.
- Nonstick spray prevents the eggs from sticking and aids easy serving.
- You can substitute Pepper Jack cheese with other cheeses like cheddar or mozzarella if preferred.
- Steaming broccoli in the microwave is a quick way to ensure it’s cooked but still crisp for the frittata.
