  • Grated apple – 1 medium apple
  • Chopped spring onions – 2 tablespoons

  • Wholemeal bread or rolls – as needed

Salmon Smash

  • 1 can red salmon, drained and boned
  • Tomato ketchup – 2 tablespoons
  • Mustard – 1 tablespoon
  • Cress – 2 tablespoons
  • Wholemeal or granary bread – as needed

Tandoori Chicken Wraps

  • Ready-cooked tandoori chicken pieces – 1 cup
  • Shredded lettuce – 1 cup
  • Chopped tomato – 1 medium tomato
  • Chapattis or flour tortillas – 4
  • Chunky cucumber raita – 4 dollops (about 4 tablespoons)

Scout’s MCC

  • Marmite – 1 tablespoon
  • Grated cheddar cheese – 1/2 cup
  • Sliced cucumber – 1/2 cup
  • Crusty baguette or ciabatta roll – 1

Cream Cheese & Roasted Red Pepper Bagels

  • Soft cream cheese – 4 tablespoons
  • Roasted red peppers from a jar – 1/2 cup, sliced
  • Onion or regular bagels – 2

Creamy Smoked Mackerel

  • Smoked mackerel fillets, skin removed and flaked – 150g
  • Mayonnaise – 2 tablespoons
  • Greek yogurt – 2 tablespoons
  • Thick wholemeal bread – as needed
  • Crisp lettuce leaves – for topping

Instructions

  1. Prepare Cheesy Apple Slaw: In a bowl, combine grated hard cheese, grated apple, chopped spring onions, a squeeze of lemon juice, and mayonnaise. Mix well until all ingredients are evenly incorporated. Spread this mixture onto wholemeal bread or rolls to serve.
  2. Make Salmon Smash: Mash the drained and boned canned red salmon in a bowl. Stir in tomato ketchup until well blended. Spread the salmon mixture onto wholemeal or granary bread and generously sprinkle with mustard and fresh cress.
  3. Assemble Tandoori Chicken Wraps: Take chapattis or flour tortillas and lay them flat. Fill each with ready-cooked tandoori chicken pieces, shredded lettuce, and chopped tomato. Roll them up tightly and serve with dollops of purchased chunky cucumber raita on the side or inside the wrap.
  4. Prepare Scout’s MCC: Spread a layer of Marmite evenly inside a crusty baguette or ciabatta roll. Add grated cheddar cheese and sliced cucumber. Close the sandwich and serve immediately, noting that Marmite has a strong taste that guests may love or dislike.
  5. Make Cream Cheese & Roasted Red Pepper Bagels: Split onion or regular bagels in half. Spread soft cream cheese generously inside each half, then add sliced roasted red peppers from a jar. Put the bagel halves together and serve.
  6. Prepare Creamy Smoked Mackerel Sandwiches: Remove skin from smoked mackerel fillets and flake the fish finely. In a bowl, combine flaked mackerel with mayonnaise and Greek yogurt until creamy. Spread the mixture over thick slices of wholemeal bread and top with crisp lettuce leaves before serving.
