- Prepare the Sriracha Caviar: Place 1 cup of canola oil into a tall glass and chill it in the freezer for about 3 hours until it becomes slightly sludgy and cold. This chilled oil will help form the sriracha caviar droplets.
- Make the Agar-Agar Sriracha Mixture: In a small saucepan, combine 1/4 cup sriracha, 4 tablespoons water, and 1 tablespoon agar-agar powder. Bring the mixture to a slow simmer over medium heat while stirring constantly to prevent burning. If the mixture starts to smoke, immediately reduce the heat and continue cooking gently.
- Simmer and Cool: Allow the mixture to simmer for about 5 minutes to activate the agar-agar, then remove the pan from the heat and pour the mixture into a small bowl to cool slightly.
- Create the Sriracha Caviar: Using a medicine dropper or small pipette, carefully drop single droplets of the sriracha mixture from about 5 inches above the chilled canola oil. The droplets will solidify into small spheres resembling caviar as they hit the cold oil.

- Form Egg Clouds: Spoon four equal mounds of the mixture onto a parchment paper-lined baking sheet. Create a small well or indentation in the center of each mound to hold the egg yolk later.
- Bake Egg Whites: Preheat the oven to 450°F (230°C). Bake the mounds of whipped egg whites for 3 minutes until they start to set and slightly brown.
- Add Egg Yolks: Carefully place one egg yolk into the well of each partially baked egg white cloud.
- Finish Baking: Return the baking sheet to the oven and bake for an additional 3 minutes to set the yolks while keeping them soft and runny.
