  • 1/2 cup Pepper Jack Cheese, shredded
  • 4 slices Bacon

Instructions

  1. Prepare the Sriracha Caviar: Place 1 cup of canola oil into a tall glass and chill it in the freezer for about 3 hours until it becomes slightly sludgy and cold. This chilled oil will help form the sriracha caviar droplets.
  2. Make the Agar-Agar Sriracha Mixture: In a small saucepan, combine 1/4 cup sriracha, 4 tablespoons water, and 1 tablespoon agar-agar powder. Bring the mixture to a slow simmer over medium heat while stirring constantly to prevent burning. If the mixture starts to smoke, immediately reduce the heat and continue cooking gently.
  3. Simmer and Cool: Allow the mixture to simmer for about 5 minutes to activate the agar-agar, then remove the pan from the heat and pour the mixture into a small bowl to cool slightly.
  4. Create the Sriracha Caviar: Using a medicine dropper or small pipette, carefully drop single droplets of the sriracha mixture from about 5 inches above the chilled canola oil. The droplets will solidify into small spheres resembling caviar as they hit the cold oil.
  5. Strain and Rinse Caviar: Once all droplets are formed, pour the oil and caviar mixture through a fine mesh strainer or perforated spoon to separate the caviar from the oil. Immediately transfer the caviar into a bowl of cold water (1 cup) to remove excess oil, then strain again. Set aside.
  6. Separate Eggs: Carefully separate the egg whites from the yolks. To ensure clean whites, separate each white into a separate bowl first before combining them all together, while placing each yolk into its own bowl for easy assembly later.
  7. Bring Egg Whites to Room Temperature: Let the collected egg whites sit at room temperature for 20 minutes to prepare for whipping.
  8. Cook and Prepare Bacon: Fry the 4 bacon slices until crispy. Drain the bacon on paper towels to remove excess grease, let cool, then crumble into small pieces.
  9. Whip Egg Whites: Using an electric mixer, beat the egg whites until stiff peaks form — when the beaters are lifted, the peaks stand firm and do not fold over. Be careful not to overbeat.
  10. Fold in Cheese and Bacon: Gently fold the shredded pepper jack cheese and crumbled bacon pieces into the whipped egg whites, maintaining as much airiness as possible.
  11. Form Egg Clouds: Spoon four equal mounds of the mixture onto a parchment paper-lined baking sheet. Create a small well or indentation in the center of each mound to hold the egg yolk later.
  12. Bake Egg Whites: Preheat the oven to 450°F (230°C). Bake the mounds of whipped egg whites for 3 minutes until they start to set and slightly brown.
  13. Add Egg Yolks: Carefully place one egg yolk into the well of each partially baked egg white cloud.
  14. Finish Baking: Return the baking sheet to the oven and bake for an additional 3 minutes to set the yolks while keeping them soft and runny.
