Treacle Base

  • 250g golden syrup
  • Zest of 1 lemon
  • Juice of ½ lemon
  • 5 tbsp breadcrumbs

Sponge

  • 200g butter, softened
  • 200g golden caster sugar
  • 3 medium eggs
  • 200g self-raising flour
  • 5 tbsp milk

Instructions

  1. Preheat Oven: Heat your oven to 180°C (160°C fan) or gas mark 4 to prepare for baking.
  2. Prepare Treacle Base: Mix the golden syrup, lemon zest, lemon juice, and breadcrumbs together in a bowl until combined. Spread this mixture evenly over the base of a 1.5 litre baking dish to form the sticky treacle layer.
  3. Make the Sponge Batter: In a separate bowl, beat the softened butter and golden caster sugar together until the mixture is pale and fluffy. Then, beat in the eggs one at a time to ensure proper incorporation.
  4. Add Flour and Milk: Gently stir in the self-raising flour and milk until the batter is smooth and well combined.
  5. Assemble and Bake: Dollop the sponge batter evenly on top of the treacle base in the baking dish. Place in the preheated oven and bake for 35-40 minutes, or until the sponge is golden, risen, and a skewer inserted into the center comes out with only a few moist crumbs.
  6. Serve: Remove from the oven and serve warm with plenty of custard, cream, or ice cream, and extra drizzles of golden syrup for added indulgence.
