- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Red Chili Pepper, sliced
- 2 tablespoons Harissa Paste
- 1/2 teaspoon Smoked Paprika
- 1 can (14 oz) Diced Tomatoes
- Salt, to taste

Instructions
- Preheat the Oven: Set your oven to 400°F (200°C) to prepare for baking the eggs.
- Heat Pan and Sauté Onion: Place a non-stick oven-proof frying pan over medium heat. Add 1 tablespoon of olive oil and the chopped onion. Cook, stirring occasionally, until the onion softens and starts to turn golden, about 3-5 minutes.
- Add Garlic: Incorporate the minced garlic and continue cooking, stirring constantly, for 1-2 minutes to release its aroma without burning.
- Cook Spices and Chili: Add the sliced red chili pepper, 2 tablespoons of harissa paste, and 1/2 teaspoon smoked paprika. Stir thoroughly and fry the mixture for approximately 5 minutes until the chili softens and the spices become fragrant.
- Add Tomatoes and Simmer: Pour in the canned diced tomatoes and mix well. Let the sauce simmer for 5-10 minutes until it thickens nicely. Season with salt to taste.
- Add Eggs: Leave the tomato mixture in the oven-proof pan and carefully crack the eggs directly onto the sauce. Alternatively, divide the sauce between two small oven-proof dishes or cast iron pans and crack one egg into each.
- Bake the Eggs: Place the pan(s) in the center of the preheated oven and bake for 6-8 minutes, or until the egg whites are set but yolks are cooked to your liking.
- Garnish and Serve: Remove from the oven and sprinkle with chopped fresh parsley. Serve immediately with crusty bread for dipping.

- You can adjust the spiciness by reducing or omitting the chili pepper or harissa paste based on preference.
