Chicken Wings

  • 12 chicken wings
  • 2 garlic cloves, crushed
  • Zest and juice of 1 lemon
  • 1 tsp cumin seeds
  • 2 tbsp olive oil
  • 1 tbsp honey

Turkish Tomato & Pepper Dip

  • 2 de-seeded plum tomatoes, finely diced
  • 1 small red pepper, finely diced
  • 1 small red onion, finely diced
  • 1 tbsp tomato purée
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp chopped parsley
  • ½ tsp ground coriander
  • ½ tsp paprika
  • Salt, to taste
  • Pinch of dried chili flakes (optional)

Instructions

  1. Prepare the Wings: Using sharp kitchen scissors, cut each chicken wing at the knuckle into two pieces, separating the drumette from the wingette for easier cooking and eating.
  2. Make the Marinade: In a bowl, combine the crushed garlic, lemon zest and juice, cumin seeds, olive oil, and plenty of seasoning (salt and pepper). Mix well to distribute the flavors evenly.
  3. Marinate the Wings: Add the chicken wing pieces into the marinade, tossing to coat each piece thoroughly. Cover the dish and refrigerate for at least 1 hour, or overnight if time permits, to allow the flavors to infuse the meat.
  4. Preheat the Cooking Method: Preheat your oven to 200°C (180°C fan) or gas mark 6. Alternatively, prepare an outdoor barbecue if preferred.
  5. Cook the Wings: Arrange the marinated wings on an oven tray in a single layer. Bake in the preheated oven for 45 to 50 minutes until the skin is crisp and golden. If using a barbecue, grill the wings for about 20 minutes, turning frequently to cook evenly.
  6. Glaze with Honey: For the final 10 minutes of cooking (whether oven or barbecue), drizzle the honey over the wings to add a touch of sweetness and help create a beautifully caramelized crust.
  7. Serve: Transfer the wings to a large platter and serve immediately. Accompany with plenty of paper napkins for easy handling. Offer side dishes such as olives, nuts, dates, pickled chillies, flatbreads, and the Turkish tomato & pepper dip for a full appetizer experience.

  • For even better flavor, marinate the wings overnight.
