  • Author: Ben
  • Total Time: 10 minutes
  • Yield: About 1 1/2 cups of spread 1x
  • Diet: Vegan

Description

This Crunchy Cashew Spread is a naturally sweet, creamy, and nutritious vegan spread made from dates, cashew nuts, and flavored with fresh lemon juice and vanilla. It’s perfect for adding a delightful crunch and rich flavor to your toast, pancakes, or waffles, offering a wholesome alternative to traditional spreads.

Ingredients

Scale

Main Ingredients

  • 1 cup Dates
  • 1 cup Cashew Nuts
  • 1 Lemon (juiced)
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt
  • 2 tablespoons Coconut Oil
  • 1/2 cup Cashew Milk

Instructions

  1. Puree Dates and Cashews: In a food processor, combine 1 cup of dates and 1 cup of cashew nuts. Process until the mixture becomes as smooth as possible, scraping down the sides if necessary to ensure even blending.
  2. Add Flavorings: Add the juice of 1 lemon, 1 teaspoon of vanilla extract, and a pinch of salt to the food processor. Continue to puree so these flavors fully incorporate into the nut and fruit mixture.
  3. Incorporate Liquids Slowly: With the food processor running, slowly pour in 2 tablespoons of coconut oil to blend in the fats, followed by 1/2 cup of cashew milk to help achieve a creamy, spreadable consistency. Process until smooth and creamy.
  4. Serve and Enjoy: Transfer the spread to a container and use it as a delicious topping for warm toast, pancakes, or waffles. Enjoy the rich, nutty, and naturally sweet flavor!

Notes

  • Use soft, pitted dates for easier blending.
  • If the spread is too thick, add a little more cashew milk to adjust consistency.
  • Store leftover spread in an airtight container in the refrigerator for up to 5 days.
  • Can be customized by adding cinnamon or nutmeg for extra warmth.
  • This recipe is vegan and free from gluten and refined sugars.
