- 1 onion, chopped
- 2 garlic cloves, roughly chopped
- Thumb-sized piece ginger, roughly chopped
- 4 tbsp korma paste
- 4 skinless, boneless chicken breasts, cut into bite-sized pieces
- 50g ground almonds, plus extra to serve (optional)
- 4 tbsp sultanas
- 400ml chicken stock
- ¼ tsp golden caster sugar
- 150g pot 0% fat Greek yogurt
- Small bunch coriander, chopped
Instructions
- Prepare the spice paste: Place the chopped onion, garlic, and ginger into a food processor and blend until forming a smooth paste. Transfer this paste into a large high-sided frying pan with 3 tablespoons of water and cook over medium heat for 5 minutes to soften and release the flavors.
- Add korma paste: Stir in the 4 tablespoons of korma paste and continue cooking the mixture for an additional 2 minutes until the mixture becomes aromatic and well combined.
- Cook the chicken: Add the bite-sized chicken pieces to the fragrant sauce, stirring to coat evenly.
- Add remaining ingredients: Incorporate the ground almonds, sultanas, chicken stock, and golden caster sugar into the pan, mixing thoroughly to combine all ingredients.
- Simmer the korma: Cover the pan with a lid and let the korma simmer gently for 10 minutes or until the chicken is fully cooked and tender.
- Finish with yogurt and seasoning: Remove the pan from heat. Stir in the 150g of 0% fat Greek yogurt and season with salt and pepper to taste.
- Garnish and serve: Sprinkle chopped coriander and flaked almonds (if using) over the top. Serve the chicken korma hot alongside brown or white basmati rice for a complete meal.
