Chicken and Marinade

  • 4 chicken breasts, cut into chunks
  • Olive oil, for frying
  • 4 limes, juice only
  • 2 tsp fajita seasoning
  • 4 spring onions, finely sliced
  • 1 fat garlic clove, crushed

Salsa

  • 1 red pepper
  • ½ jar roasted pepper (Gaea Red Peppers Flame Roasted 290g recommended)
  • 1 small apple, peeled
  • 4 ripe tomatoes
  • ½ lime, juice only
  • Small bunch coriander, leaves picked
  • Chilli sauce, to taste (optional)

Guacamole

  • 2 very ripe avocados, halved and stone removed
  • ½ lime, juice only

To Serve

  • Grated cheese
  • 68 tortillas (mini tortillas for kids optional)
  • Soured cream (optional)

Instructions

  1. Marinate the Chicken: In a bowl, combine the chicken chunks with lime juice, fajita seasoning, finely sliced spring onions, and crushed garlic. Cover the bowl and refrigerate for at least two hours to allow the flavors to meld.
  2. Prepare the Salsa: For children aged 5 and above, safely chop the red pepper, roasted pepper, peeled apple, and ripe tomatoes using a kid-friendly knife. Younger children can help by picking coriander leaves. Place the salsa ingredients along with lime juice and a pinch of seasoning into a food processor. Pulse till finely chopped. Remove two large spoonsful for younger children before adding optional chilli sauce and pulsing again to combine.
  3. Make the Guacamole: Children can help mash the avocado in a bowl using a potato masher or fork. Stir in lime juice and season with black pepper. Grown-ups should squeeze the lime juice to avoid stinging eyes.
  4. Cook the Chicken: Heat olive oil in a frying pan over medium heat. Add the marinated chicken and cook for 5 to 8 minutes, stirring occasionally, until the chicken chunks are fully cooked and no longer pink inside.
  5. Prepare Toppings and Tortillas: Place grated cheese, both salsa versions, guacamole, and soured cream in separate colorful serving bowls. Heat the tortillas as per package instructions to warm.
  6. Assemble and Serve: Show children how to lay out a tortilla, add their favourite toppings, roll it up tightly, and enjoy their homemade fajitas!
