  • 1 small apple, peeled
  • 4 ripe tomatoes
  • ½ lime, juice only
  • Small bunch coriander, leaves picked
  • Chilli sauce, to taste (optional)
  • 2 very ripe avocados, halved and stone removed
  • ½ lime, juice only
  • Grated cheese, to serve
  • 6 – 8 tortillas (mini tortillas work well for kids)
  • Soured cream (optional)

Instructions

  1. Step 1: In a bowl, combine the chicken chunks with lime juice and fajita seasoning. Cover and place in the fridge for at least two hours to marinate.
  2. Step 2: For the salsa, roughly chop the red pepper, roasted pepper, apple, and tomatoes. If children are involved and over 5 years old, they can help with chopping using a safe plastic knife; younger children can pick coriander leaves and mix them in.
