Instructions

- Add the Liquids and Beans: Pour in the canned crushed tomatoes, coconut milk, and drained kidney beans. Stir to combine and bring the mixture to a gentle simmer over medium heat, allowing the flavors to meld and the curry to warm through.
- Finish and Season: Stir in the chopped fresh cilantro. Season the curry with salt, ground black pepper, and fresh lime juice to taste. Adjust seasoning as necessary, then remove the pot from heat and serve warm.
