  • 50g cocoa powder
  • 120g icing sugar
  • A pinch of salt

  • 150g butter
  • 2 eggs

Instructions

  1. Mix dry ingredients: In a large bowl, combine the plain flour, cocoa powder, icing sugar, and a pinch of salt. Stir them together evenly to distribute all dry ingredients.
  2. Add butter: Rub the butter into the dry mixture using your fingertips until it resembles fine breadcrumbs.
  3. Combine eggs: Mix in the eggs and quickly knead everything together by hand to form a smooth dough.
  4. Chill dough: Wrap the dough in foil, flatten into a disc shape, and chill in the refrigerator for 30 minutes to make it easier to roll out.
  5. Prepare baking sheets and oven: Preheat the oven to 180°C (fan 160°C, gas mark 4). Line a couple of baking sheets with baking parchment.
  6. Roll and cut dough: Lightly flour a work surface and roll out the chilled dough to about 3mm thickness. Use cookie cutters to cut out shapes and arrange similar sized biscuits together on the baking sheets.
  7. Bake biscuits: Bake in the preheated oven for 7 to 10 minutes depending on the size until firm to the touch. Remove from oven and let cool completely on wire racks.
  8. Reuse dough scraps: Gather the off-cuts of dough, knead them together briefly, then wrap and chill again for 15 minutes. Roll, cut, and bake as before.
  9. Decorate: Once the biscuits are completely cooled, decorate with melted chocolate or piping icing, adding sugar pearls and sprinkles for a festive finish.
