Dry Ingredients
- 270g plain flour
- 50g cocoa powder
- 120g icing sugar
- A pinch of salt
Wet Ingredients
- 150g butter
- 2 eggs
Decoration
- Melted chocolate or piping icing
- Sugar pearls
- Sprinkles
Instructions
- Mix dry ingredients: In a large bowl, combine the plain flour, cocoa powder, icing sugar, and a pinch of salt. Stir them together evenly to distribute all dry ingredients.
- Add butter: Rub the butter into the dry mixture using your fingertips until it resembles fine breadcrumbs.
- Combine eggs: Mix in the eggs and quickly knead everything together by hand to form a smooth dough.
- Chill dough: Wrap the dough in foil, flatten into a disc shape, and chill in the refrigerator for 30 minutes to make it easier to roll out.
- Prepare baking sheets and oven: Preheat the oven to 180°C (fan 160°C, gas mark 4). Line a couple of baking sheets with baking parchment.
- Roll and cut dough: Lightly flour a work surface and roll out the chilled dough to about 3mm thickness. Use cookie cutters to cut out shapes and arrange similar sized biscuits together on the baking sheets.
- Bake biscuits: Bake in the preheated oven for 7 to 10 minutes depending on the size until firm to the touch. Remove from oven and let cool completely on wire racks.
- Reuse dough scraps: Gather the off-cuts of dough, knead them together briefly, then wrap and chill again for 15 minutes. Roll, cut, and bake as before.
- Decorate: Once the biscuits are completely cooled, decorate with melted chocolate or piping icing, adding sugar pearls and sprinkles for a festive finish.
Notes
- Chilling the dough helps prevent the biscuits from spreading too much during baking.
- Ensure biscuits are completely cooled before decorating to avoid melting the icing or chocolate.
- You can use any festive shaped cookie cutters to add variety.
- Store biscuits in an airtight container to keep them fresh.
