  1. Prepare the Oven and Tin: Preheat the oven to 180°C (160°C fan) or gas mark 4. Butter a 900g loaf tin, then line the base and sides with baking parchment to prevent sticking.
  2. Cream Butter and Sugar: Using an electric whisk, beat the softened butter and golden caster sugar together until the mixture is light and fluffy. This incorporates air for a tender crumb.
  3. Add Eggs and Vanilla: Mix the beaten eggs and vanilla extract together. Gradually add this combined liquid to the butter and sugar mixture a little at a time, whisking well between each addition to ensure a smooth batter.
  4. Combine Dry Ingredients and Bananas: Gently fold in the self-raising flour, a pinch of salt, and baking powder into the wet mixture. Then, fold in the mashed bananas and most of the chocolate chips, reserving a handful for topping.
  5. Fill and Decorate the Tin: Scrape the batter into the prepared loaf tin, smoothing the top. Scatter the remaining chocolate chips evenly over the surface for a deliciously chocolatey crust.
  6. Bake: Place the tin in the oven and bake for about 50 minutes, or until the loaf is puffed up and cooked through. Test doneness by inserting a skewer into the middle; it should come out clean.
