Chicken Filling
- 1 tbsp vegetable oil
- 1 onion, finely sliced
- 1 garlic clove, crushed
- 2 chicken breasts, sliced into strips
- 2 tbsp chipotle paste
- 400g can chopped tomatoes
- 400g can black beans, drained
Wrap Assemblies
- 4 large corn or flour tortilla wraps
- ½ avocado, stoned, peeled and sliced
- ½ Baby Gem lettuce, shredded
- 1 lime, halved
Instructions
- Cook the onion: Heat the vegetable oil in a frying pan over low-medium heat. Add the finely sliced onion and cook gently for about 10 minutes until softened and translucent.
- Add garlic and chicken: Crush in the garlic clove and stir for 1 minute until fragrant. Increase the heat slightly and add the chicken strips, browning them all over to seal in the juices.
- Add chipotle paste and tomatoes: Spoon over the chipotle paste and stir well to coat the chicken evenly, cooking for 1 minute to release flavors. Pour in the chopped tomatoes and bring the mixture to a boil.
- Simmer the chicken: Season the sauce well with salt and pepper, then reduce the heat to a gentle simmer. Cook uncovered for 5-6 minutes until the chicken is cooked through and the sauce has thickened with excess liquid evaporated.
- Incorporate black beans: Stir the drained black beans through the chicken mixture just to warm them through, then remove the pan from the heat.
- Warm the tortilla wraps: Heat the tortilla wraps as per the pack instructions until pliable and warm.
- Assemble the wraps: Divide the chicken and bean mixture evenly between the warm wraps. Top with sliced avocado and shredded Baby Gem lettuce.
- Add fresh lime and serve: Squeeze fresh lime juice over the fillings, then roll up each wrap tightly and cut in half to serve immediately.
Notes
- You can use either corn or flour tortillas based on preference.
- For extra spice, add a pinch of chili flakes along with the chipotle paste.
- Make sure the chicken is fully cooked; no pink should remain inside.
- Serve with a side of sour cream or salsa for added flavor.
